This sim­ple and easy roasted but­ter­nut dish is a great veg­gie to enjoy with any braai.


12 But­ter­nut, sliced
3Tspoons Olive oil
1 tspoon Rose­mary
1 tspoon sugar


Place the sliced but­ter­nut in a flat bot­tomed cast iron pot, or wrap in tin foil. Driz­zle the olive oil over the but­ter­nut. Then sprin­kle the sugar and rose­mary over the sliced but­ter­nut. Put the lid back onto the pot. Cover the lid with coals, and put a few coals under the pot, not to many as the but­ter­nut will burn. Bake for approx­i­mately an hour. If you are using tin foil, place in the coals and turn regularly.
