This simple and easy roasted butternut dish is a great veggie to enjoy with any braai.
1⁄2 Butternut, sliced
3Tspoons Olive oil
1 tspoon Rosemary
1 tspoon sugar
Place the sliced butternut in a flat bottomed cast iron pot, or wrap in tin foil. Drizzle the olive oil over the butternut. Then sprinkle the sugar and rosemary over the sliced butternut. Put the lid back onto the pot. Cover the lid with coals, and put a few coals under the pot, not to many as the butternut will burn. Bake for approximately an hour. If you are using tin foil, place in the coals and turn regularly.
