Recipes don’t come much easier than this, experiment with different ingredients. This is also a good recipe for using the left over meat from your previous evenings braai.
1 cup chopped (cooked) ham or beef
1 cup chopped spring onions
11⁄2 cups chopped mushrooms
1⁄2 cup peas
1 cup cheddar cheese
1 ring feta cheese
1⁄2 cup milk
1 tspoon mixed herbs
Use a big flat bottomed pot, with a lid. (for putting the coals onto.)
Scramble the milk, eggs and herbs together. Mix the rest of the ingredients together (except the cheese), in your flat cast iron pot. Pour the egg mixture evenly over the ingredients in your pot, and then spread the grated cheddar cheese on top of the contents of the pot. Cover with the lid.
Place your pot over some coals. Put approximately 3 to 4 times more coals on the lid. Bake for approximately 30 minutes or until the egg is done.
Cooking times may vary considerably, depending on the conditions of your fire.
