Recipes don’t come much eas­ier than this, exper­i­ment with dif­fer­ent ingre­di­ents. This is also a good recipe for using the left over meat from your pre­vi­ous evenings braai.


1 cup chopped (cooked) ham or beef
1 cup chopped spring onions
112 cups chopped mush­rooms
12 cup peas
1 cup ched­dar cheese
1 ring feta cheese
5 eggs
12 cup milk
1 tspoon mixed herbs


Use a big flat bot­tomed pot, with a lid. (for putting the coals onto.)

Scram­ble the milk, eggs and herbs together. Mix the rest of the ingre­di­ents together (except the cheese), in your flat cast iron pot. Pour the egg mix­ture evenly over the ingre­di­ents in your pot, and then spread the grated ched­dar cheese on top of the con­tents of the pot. Cover with the lid.

Place your pot over some coals. Put approx­i­mately 3 to 4 times more coals on the lid. Bake for approx­i­mately 30 min­utes or until the egg is done.

Cook­ing times may vary con­sid­er­ably, depend­ing on the con­di­tions of your fire.
