This is a very sim­ple Cur­ried Chicken pot that requires min­i­mal effort. And very very tasty.

Ingre­di­ents

2 Tbspoos Olive oil
+- 1kg Chicken
2 Onions
4 Cloves Gar­lic, chopped
3 tspoons Curry Powder,the strength that you pre­fer
1 tin Toma­toes
1 tin But­ter Beans
12 tspoon salt
1Tspoon sugar
1Tspoon Vine­gar
2 Star Aniseed
1 Heaped Spoon Smooth Apri­cot Jam
4 Tspoons Mrs Balls Chut­ney
A Hand­ful Coriander

Method

Fry the onion in the oil, untill translus­cent. Remove the onion from the pot.

Fry the chicken, then add the onion, gar­lic and curry powder.

Add the apri­cot jam, tomatoes,salt ‚sugar,vinegar, chut­ney and star aniseed.

Give a good stir and put the lid on the pot. Chicken comes apart quite eas­ily, so let your pot sim­mer slowly for approx­i­mately an hour.

Serve with your favourite rice.
