This is a very simple Curried Chicken pot that requires minimal effort. And very very tasty.
2 Tbspoos Olive oil
+- 1kg Chicken
4 Cloves Garlic, chopped
3 tspoons Curry Powder,the strength that you prefer
1 tin Tomatoes
1 tin Butter Beans
1⁄2 tspoon salt
2 Star Aniseed
1 Heaped Spoon Smooth Apricot Jam
4 Tspoons Mrs Balls Chutney
A Handful Coriander
Fry the onion in the oil, untill transluscent. Remove the onion from the pot.
Fry the chicken, then add the onion, garlic and curry powder.
Add the apricot jam, tomatoes,salt ‚sugar,vinegar, chutney and star aniseed.
Give a good stir and put the lid on the pot. Chicken comes apart quite easily, so let your pot simmer slowly for approximately an hour.
Serve with your favourite rice.
