sweet potato smothered in mince and white sauce

This is a very tasty way of enjoy­ing a sweet potato, and your guests will be want­ing seconds.


6 sweet pota­toes, wrapped in foil
500g mince
100g tomato paste
1 green pep­per, chopped
1 red pep­per, chopped
250g mush­rooms
3 sticks cel­ery (optional)
2 onions finely chopped
3 cloves gar­lic, finely chopped
1 tspoon mixed herbs
4 Tspoons chut­ney
1 cup grated cheese

1 packet bacon , fried

White Sauce

250 ml milk
30-​40mll cake flour
knob of butter

Place the sweet pota­toes in the coals of your fire, for approx­i­mately an hour. Turn them reg­u­larly. They are done when they are soft to the touch.

In the mean­time, fry your onions and gar­lic in your cast iron pot, until the onions become translu­cent. Add the mince, tomato paste, herbs and chut­ney and fry for a fur­ther 5 minutes.

Now add the pep­pers and cel­ery and cook for a fur­ther 10 min­utes. Lastly add the mush­rooms and cook every­thing until done.

Halve the sweet pota­toes, and put them flat side fac­ing up, in a flat bot­tomed cast iron pot.

If you are going to use bacon, put the bacon onto the sweet pota­toes, and cover this with a big scoop of mince. Do this for each potato. On top of this pour some of the white sauce that you have made. Sprin­kle the white sauce with a bit of grated cheese. ( Optional, gar­nish with a sliver of avocado.)

Put the lid on the pot, and place the pot back in the coals. Note, not to many coals under the pot, but cover the lid with coals. It should be ready in about 2030 minutes.
