I saw a photo of some­thing sim­i­lar in a mag­a­zine a while back, and I thought to myself this looks quite easy to make. The most dif­fi­cult part of this recipe is try­ing not to break the egg yolks. It seems like I always buy the eggs with the bro­ken egg yolks, but after crack­ing a few eggs I usu­ally find an egg with a whole yolk. On the photo I used a wrap, but I guess a pizza base or a rotti might also work. If you have loads of time at the camp­site, try mak­ing some flat bread, this the kids enjoy doing.


mushed avo­cado
fried diced bacon
bal­samic vinegar


Warm the wrap on the coals or in a pan for a few sec­onds. Evenly spread the avo­cado onto your wrap. Now try to find one of those eggs with­out the bro­ken yolks, fry or scram­ble it. Place it in the cen­tre of your wrap. Add salt pep­per and vine­gar to taste. That´s it. This is not much more dif­fi­cult than mak­ing a sand­wich, and the kids love it. (That is if they like avocado.)
